摘    要:本文对保山肥育猪胴体作了肉切块质量评价。其切块大理石纹丰富,肉色鲜艳,同时具备极品鲜肉、腌肉、烧烤原料的品相,并有独特的地方风味。保山猪肉具有配合松露开发国际市场的潜力。

Abstract:The meat cuts of Baoshan finishers were reviewed for the meat quality.The cuts have a beautiful color and rich marbling.The cuts can be used as top fresh meat,BBQ meat,and as cured.In addition,the cuts have potential capacity for international meat market if combined with truffle.
