河南信阳地区扁形名优绿茶机制工艺探讨

摘    要:分析了信阳地区扁形名优绿茶存在的问题,设计了扁形茶机制工艺,并对机器组合进行正交试验研究。结果表明:机制扁形茶品质优良,最佳机器组合为杀青(6CST-40D)、轻揉(6CR-35型)、做形(6CLZ-60D型)、摊凉、烘焙(JXY-6CTH-6.0)。

Abstract:Problems of the famous oblate green tea in Xinyang were analysed.The oblate tea mechanism process was designed.An orthogonal experiment was conducted to study the machine combination.The results showed that the quality of mechanism oblate tea was excellent,the optimum machine combination as follows:de-enzyming(6CST-40D),rolling(6CR-35),shape-making(6CLZ-60D),laying,drying(JXY-6CTH-6.0).
