人工养殖黑龙江茴鱼肌肉营养成分的分析

摘    要:采用常规生化分析方法对人工养殖黑龙江茴鱼的肌肉营养成分进行了测定。结果表明,黑龙江茴鱼肌肉鲜样中水分含量为79%、蛋白质含量为17.93%、脂肪含量为1.57%、灰分含量为1.8%。黑龙江茴鱼肌肉含有18种氨基酸,总量占鲜样的18.28%,其中8种人体必需氨基酸含量占鲜样的7.68%,支链氨基酸与芳香族氨基酸的比值(F值)为2.34,4种鲜味氨基酸占鲜样的6.83%,其必需氨基酸构成比例符合FAO/WHO的标准;根据AAS,黑龙江茴鱼的第一限制性氨基酸为缬氨酸,第二限制性氨基酸为色氨酸;而根据CS,第一限制性氨基酸为色氨酸,第二限制性氨基酸为蛋+胱氨酸:必需氨基酸指数(EAAI)为89.50。综合分析认为,黑龙江茴鱼是一种食用安全、营养价值较高的鱼类,具有良好的开发利用前景。

Abstract:In this study, the contents of nutritional composition are measured in muscles of amur grayling (Thymallus grubii Dybowski). The results showed that the moisture content was 79%, crude protein content was 17.93%, crude fat content was 1.57% and ash content was 1.8% in fresh weight muscle. There were 18 kinds of amino acids whose total contents were 18.28%, eight kinds of essential amino acid contents were 7.68%, the branched chain amino acid/aromatic amino acid ratio (F value) was 2.34 and four kinds of delicious amino acid contents were 6.83% in fresh weight muscle. The essential amino acid composition in muscle met the standard of FAO/WHO. According to the AAS, the first limiting amino acid was valine and the second one was tryptophan. According to the CS, the first limiting amino acid was tryptophan, the second one was methionine and cystine sum. The essential amino acid index of muscle was 89.50. In conclusion, amur grayling is a kind of safety and higher nutritional value fish and the exploiture prospect is better.
