结球甘蓝差压预冷周转箱开孔方式研究

摘    要:目的]研究开孔方式对果蔬差压预冷效果的影响。方法]预冷环境温度控制为3℃,湿度控制在85%~95%。通过对比果实内部的温度均匀度和降温速率研究了不同开孔方式对预冷效果的影响。结果]第1、2种开孔方式是在周转箱两侧均匀的开2排5个圆孔,第34、种开孔方式是在周转箱两侧相同的位置均匀的开3排3列9个圆孔,第13、种开孔方式的孔径为40 mm,第24、种开孔方式的孔径为60 mm。第1种开孔方式下结球甘蓝中心与表皮处的降温速率差异小于第2种开孔方式。第34、种开孔方式下结球甘蓝的降温速率较快。第13、种开孔方式下结球甘蓝的预冷均匀度好于第2、4种开孔方式。结论]综合考虑差压预冷速率、结球甘蓝冷却的均匀性以及周转箱的抗压强度和耐破强度,第3种开孔方式最佳。

Experimental Study on the Different Openning Ways of Differential Pressure Precooling Turnover Box for Common Head Cabbage

Abstract:Objective]The aim was to study the influence of openning ways on the differential pressure precooling effect of fruit and vegetable.Method]The temperature and humidity of precooling environment were controlled at 3 ℃ and in 85%-95%.Through comparing the inner temperature uniformity and cooling rates of fruit,the the influences of different openning ways on cooling effect were studied.Result]The 1st and 2nd ways were openning 2 rows,5 circle holes per row,uniformly on the two sides of turnover box,the 3rd and 4th ways were openning 3 rows and 3 lines of 9 holes uniformly on the same positions of both sides of turnover box,the pore diameter of the 1st and 3rd ways were 40 mm and that of the 2nd and 4th ways were 60 mm.The difference of reducing rate of temperatures between center and surface of common head cabbage of the 1st openning way was less than that of the 2nd openning way.The reducing rate of temperature of common head cabbage was higher under the 3rd and 4th openning ways.Conclusion]Taking differential pressure precooling rate,the cooling uniformity of common head cabbage and the crushing strength and bursting strength of turnover box into consideration,the 3rd openning way was best.
