| 摘 要： | 为了探明都匀毛尖茶叶的香气成分特点,以不同产地的毛尖茶为材料,采用气相色谱-质谱联用仪对7个贵州毛尖茶样品中的香气成分进行测定,用峰面积归一法测定各成分的相对含量。结果:1)都匀毛尖共检出香气成分132种,相同成分42种,其中,醇类13种,酸类8种,酯类4种,醛类3种,酮类2种,杂环类5种,碳氢化合物7种,醇类和酸类物质中,大于1%的有叶绿醇(27.85%)、沈香醇(2.90%)、苯乙醇(2.81%)、苄醇(2.48%)、橙花醇(1.76%)、棕榈酸(23.07%)、亚油酸(4.08%)、9,12,15-烯十九酸(2.02%)、亚麻酸甲酯(4.72%)和咖啡因(2.75%)。2)都匀毛尖与遵义毛尖茶的香气成分比较相似,而与安顺毛尖茶香气成分的差异较大。结论:都匀毛尖茶叶的主要香气成分为醇类及酸类化合物。

| Abstract: | In order to verify the features of the aroma compositions in Duyun Maojian Tea from different producing areas,GC-MS was used to determine the relative content of each component by the peak area normalization method.The results showed that 132 compounds were identified in Duyun Maojian Tea,42 compounds were common.Alcohols 13 kinds,acids 8 kinds,esters 4 kinds,aldehydes 3 kinds,kentons 2 kinds,heterocyclic 5 kinds,hydrocarbon 7 kinds.Most of the contents of the compounds were more than 1%,including phytol(27.85%),linalool(2.90%),phenylethyl alcohol(2.81%),benzyl alcohol(2.48%),nerol(1.76%),palmitic acid(23.07%),linoleic acid(4.08%),9,12,15-ene 19 acid(2.02%),linolenic acid methyl ester(4.72%),caffeine(2.75%).The identify results showed that the main aroma compositions were alcohol and acid compounds. |
