酶解法提取鸡腿菇多糖的研究

摘    要:目的]为鸡腿菇多糖的生产提供有益的参考,拓宽鸡腿菇的食品应用价值。方法]在单因素试验的基础上进行正交试验,确定酶解法提取鸡腿菇多糖的最佳工艺条件。结果]温度、pH和水解时间3个因素对酶解法提取鸡腿菇多糖的影响依次为温度〉水解时间〉pH,但差别不大。鸡腿菇多糖提取的最佳工艺条件为:水解时间3.5 h,温度30℃,pH 3.0,纤维素酶1.0%。在该最佳方案下,鸡腿菇多糖提取率为17.1%。结论]优化了酶解法提取鸡腿菇多糖的工艺。
