摘    要:以3个秋子梨品种的完熟果实为试材,采用固相微萃取(SPME)和气相色谱—质谱联用(GC/MS)技术对3个品种完熟果实的香气成分进行提取、分离,并结合谱库检索技术、人工解析和相关资料对化合物进行鉴定,用内标法测定各成分的相对含量。结果表明,3个秋子梨品种完熟果实中分别鉴定出41种、16种和34种香气成分,其果实香气成分主要由烯烃类、酯类、烷类、醛类等化合物组成;3个品种主要香气成分种类数及其质量分数、主要香气类别质量分数与香气总量均存在一定差异;相关性分析表明:十六烷、α—法尼烯、萘、乙酸己酯、丁酸己酯、乙酸2—苯基乙酯含量对果实香气程度影响较大。
