| 摘 要： | 为了探讨紫花苜蓿芽苗的营养价值,对3种苜蓿芽苗中氨基酸、钙、磷、铁、锌等营养成分进行了分析.结果表明,苜蓿芽苗含有丰富的蛋白质、膳食纤维、矿物质和维生素等营养成分,所含营养成分比较齐全,粗蛋白含量在40.36%～37.89%,钙为1.35%,磷为0.9%;且紫花苜蓿中的氨基酸种类齐全,含人体所需的9种必需氨基酸和9种非必需氨基酸,其中苏氨酸含量最高,且组成比例较为平衡,与联合国粮农组织推荐的成人氨基酸模式基本相符,是平衡膳食结构的佳品.

| Abstract: | In order to discuss nutritive value of alfalfa bud seedling,some nutrient components in the alfalfa bud seedling,such as amino acid,calcium,phosphorus,iron,zinc and so on,were analyzed.The results show that the alfalfa bud seedling has integrated nutrient components with rich of protein,dietary fiber,mineral and vitamin.The content of crude protein,calcium and phosphorus is 40.36%~37.89%,1.35% and 0.9% respectively.There are 9 kinds of essential and 9 kinds of non-essential amino acids in the alfalfa with t... |
