摘    要:为探讨短期禁食提升池塘养殖鱼类食用品质的技术可行性,以3个邻近池塘养殖的商品草鱼为对象,分别转移至另一个池塘的3个网箱中,进行21 d短期禁食。每间隔7 d采集3个池塘来源的草鱼,并将鱼体分割为A、B、C、D共4个身段,采集其肌肉样品,对肌肉水分、粗蛋白质、粗脂肪和糖原含量进行定量分析。结果显示,禁食7 d时,不同身段肌肉营养物质含量即发生改变,14 d时粗蛋白含量和粗脂肪含量变化较大,其中尾部(C、D段)的粗蛋白含量有显著增加的趋势;而10号池塘来源的草鱼A段粗脂肪含量在14和21 d分别比0 d减少了22.60%和17.07%,B、D段分别在7、14和21 d比0 d减少了7.50%、19.41%、12.61%和28.83%、36.68%、13.49%,17号池塘来源的的草鱼A、C和D段在7 d后显著增加,B段在7、14和21 d比0 d分别减少了26.76%、58.41%和62.90%,D段在7和14 d比0 d分别减少了1.52%和22.58%。3个池塘来源的草鱼肌糖原含量(C、D段)有显著增加的趋势。采集草鱼身体B段背部肌肉样品,测定其肌肉系水力、肌肉质构特性和组织切片,发现...

Abstract:Objective] In order to explore the technical feasibility of short-term fasting to enhance the edible quality of pond-raised fish,Methods] commercial Ctenopharyngodon idellus(C. idellus) raised in three nearby ponds were moved for a 21-day short-term fast to three net cages in another pond. At intervals of 7 days, C. idellus from the three ponds were taken and separated into A, B, C, and D body segments. For a quantitative study of muscle moisture, crude protein, crude fat and glycogen content, muscle samples were collected. Results] The results showed that the nutrient contents of muscles of different body segments changed at 7d of fasting, and the crude protein content and crude fat content changed greatly at 14d, in which there was a significant increase in the crude protein content of the tail (segments C and D); whereas the crude fat content of C. idellus A segment from the source of pond No. 10 was reduced by 22.60% and 17.07% compared with that of 0d at 14d and 21d, respectively, and the crude fat content of segments B, D decreased by 7.50%, 19.41%, 12.61%, and 28.83%, 36.68%, and 13.49% from 0d at 7d, 14d, and 21d, respectively, while C. idellus from Pond 17 sources had a significant increase in segments A, C, and D after 7d, with segments B decreasing by 26.76%, 58.41%, and 62.90% from 0d at 7d, 14d, and 21d, and segments D decreasing by 26.76%, 58.41%, and 62.90% from 0d at 7d and 14d decreased by 1.52% and 22.58% from 0d. There was a significant increase in myoglycogen content (segments C and D) of C. idellus from the three pond sources. Samples of dorsal muscles of C. idellus body segment B were collected to determine muscle tethering force, muscle textural properties and tissue sections, and the results showed that there was no significant difference in the drip loss rate of dorsal muscles of C. idellus originating from pond 10 at 14d, that of dorsal muscles of C. idellus originating from pond 17 was significantly higher than that of 0d at 14d, and that of the dorsal muscles of C. idellus originating from pond 18 showed a decreasing trend in all of them at 14d . C. idellus B-section muscles from the three pond sources showed a decrease in hardness, an increase in muscle elasticity, a gradual trend of increase in mastication by 14 d, and a gradual increase in cohesion with prolongation of the fasting period. The density of dorsal muscle fibers (myoblasts) increased and the gap between muscle fibers decreased during fasting, muscle hardness decreased gradually with fasting time, while elasticity and chewability showed a gradual increasing trend. Conclusion] The results of this experiment showed that short-term fasting can change the edible quality of C. idellus muscle, and the length of fasting for 14d was the best for the comprehensive test results.Significance] The results of this study provide a scientific basis for improving the edible quality of fish cultured in ponds.
