西藏不同产地冬虫夏草中氨基酸成分分析及其营养价值评价

摘    要:测定西藏不同产地冬虫夏草中氨基酸成分的种类和含量,并对其营养价值进行评价,为深入研究和开发利用中国西藏地区冬虫夏草资源提供科学依据。样品经盐酸水解后,利用氨基酸自动分析仪对其所含氨基酸进行成分分析,通过氨基酸比值系数法对不同产地冬虫夏草进行营养价值评价。各产地冬虫夏草中均含有17种氨基酸,7种人体必需氨基酸,4种鲜味氨基酸,9种药效氨基酸,其中氨基酸总量范围在23.4%~24.52%之间,必需氨基酸占氨基酸总量的范围在26.47%~27.52%之间,鲜味氨基酸占氨基酸总量的范围在35.12%~37.44%之间,药效氨基酸占氨基酸总量的范围在55.03%~57.54%之间,各产地冬虫夏草SCR范围在66.0~69.7之间,第一限制氨基酸为蛋氨酸+胱氨酸。西藏各产地冬虫夏草中氨基酸种类和含量无显著性差异,必需氨基酸相对均衡与合理,就氨基酸而言,昌都虫草的营养价值较高。

Abstract:The kind and content of amino acid in Cordyceps Sinensis from different regions of Tibet were analyzed by automatic amino acid analyzer, the nutritional value was evaluated using amino ratio coefficient. The results showed that there were 17 amino acids and 7 essential amino acids in all materials. The total amino acids in Cordyceps Sinensis from different regions of Tibet ranged from 23.4% to 24.52%, the essential amino acids took up 26.47%~27.52% of the total amino acids. With amino ratio coefficient, the first limiting amino acids was Met+Cys. SCR ranged from 66.0 to 69.7. Compare with Cordyceps Sinensis from different regions of Tibet, the Cordyceps Sinensis from Qamdo was higher trophic than the others.
