葡萄汁抗氧化作用的研究

摘    要:目的]探讨葡萄汁的抗氧化作用。方法]取新鲜去皮去籽的红葡萄果肉榨取鲜葡萄果汁,通过DPPH法、邻苯三酚自氧化法、Fenton反应、烷基自由基引发的亚油酸氧化体系法分别测定不同浓度葡萄溶液的总抗氧化能力和清除超氧阴离子自由基、羟自由基、烷基自由基的能力。结果]葡萄溶液对DPPH·的清除作用随其试验浓度增加而逐渐增大,IC50在高浓度(0.5mg/ml)时,葡萄溶液对DPPH·的最大清除率为90.51%,与对照VC相当;IC50在高浓度时,葡萄溶液对超氧阴离子自由基的最大清除率为73.40%;所有试验浓度的葡萄溶液对清除羟自由基的能力均明显高于VC,最高能达到86.24%;IC50在0.4~0.5mg/ml时,葡萄溶液具有一定的烷基自由基清除能力,可达50.77%,但其清除能力略低于Vc。结论]葡萄具有很好的抗氧化作用。

Abstract:Objective] The study aimed to discuss the antioxidation action of grape. Method] The fresh red grape flesh was selected to extract into the fresh grape juice and the total ability of antioxidation and the abilities of removing superoxide anion radical, hydroxyl radical and alkane radical by the grape solution with different concn. were determined through DPPH· method, pyrogallol autoxidation method, Fenton reaction and linoleic acid system caused by hydroxyl radical. Result] The action of removing DPPH by grape solution was gradually increased with its testing concn. and when IC_(50) was at high concn. of 0.5 mg/ml, the maximum removing rate on DPPH· by the grape solution was 90.51%, being quite with that by CK Vc. When IC_(50) was at high concn., the maximum removing rate on superoxide anion radical by the grape solution was 73.40%. The removing ability on hydroxyl radical by the grape solution with all testing concn. was all obviously higher than that of Vc, being as highest as 86.24%. When IC_(50) was at 0.4~0.5 mg/ml, the grape solution showed a certain ability of removing alkane radical and its removing rate was up to 50.77%, but its removing ability was slightly lower than that of Vc. Conclusion] The grape showed a very good antioxidation action.
