| 摘 要： | 测定了绞股蓝、广西绞股蓝和五柱绞股蓝的幼嫩部分与成熟部分的食用营养成分。结果表明,三种植物幼嫩部分的水分、灰分、可溶性糖、粗蛋白质、维生素C和有机酸含量以及矿质元素P、K、Zn的含量高于成熟部分,而成熟部分的粗脂肪、粗纤维含量以及Mg、Fe、Mn、B、Cu、Ni和Li元素的含量高于幼嫩部分。绞股蓝的可溶性糖、粗纤维、有机酸、粗脂肪以及矿质元素Fe和Li的含量最高,广西绞股蓝的维生素C含量以及矿质元素P、K、Zn、Mg、Cu和Ni的含量最高,五柱绞股蓝的灰分、粗蛋白质以及矿质元素Mn和B的含量最高。

| Abstract: | The edible nutrients of tender parts and mature parts of Gynostemma pentaphyllum,G.pentagynum and G.guangxiense were determined.The results showed that the contents of water,ash,soluble sugar,crude protein,vitamin C and organic acids,as well as the mineral element P、K、Zn were higher in the tender parts than those in the mature parts;on the other hand,the contents of crude fat,crude fiber and mineral element Mg、Fe 、Mn、B、Cu、Ni and Li were higher in the mature parts than those in the tender parts.G.pentaphyllum had the highest contents of soluble sugar,crude fiber,organic acids,crude fat,Fe and Li.G.guangxiense had the highest contents of vitamin C as well as P、K、Zn 、Mg、Cu and Ni.While the richest components of ash,crude protein,Mn and B were tested in G.pentagynum. |
