菜花采后生理变化研究

摘    要:以新鲜白菜花为试验原料,通过对其失重率、呼吸强度、VC、褐变度、还原糖、过氧化物酶活性的测定,研究其采后贮藏过程中的生理变化。结果表明:菜花采后贮藏过程中,失重率、褐变度均呈上升趋势,呼吸强度和VC含量均呈下降趋势,还原糖含量呈先上升后下降趋势,过氧化物酶活性呈先下降后上升趋势。

Research on Postharvest Physiological Changes of Cauliflower
Abstract:Using fresh cauliflower as experiment material,the postharvest physiological changes of cauliflower were studied by the determination of weight loss,respiration intensity,vitamin C,browning degree,sugar content and peroxidase activities.The results showed that the weight loss and browning degree of cauliflowers were on the increase during storage,the respiratory intensity and the content of vitamin C of cauliflowers were on the decrease during storage,reducing sugar content in cauliflowers were on the decrease after the increase,peroxidase activities of cauliflowers were on the increase after the decrease.
