| 摘 要： | 信阳地处山区 ,山野菜种类繁多、资源丰富。因其很高的营养价值 ,无污染的优越性 ,受到人们的青睐 ,其开发前景十分广阔。为对山野菜———蕨菜的开发利用提供充分的依据 ,我们对其营养成分进行了分析测定 ,结果表明 :粗水分为 89 1% ,干制品粗蛋白为 2 4 6 2 %、纯蛋白为 4 6 1%、粗纤维含量为 15 1% ,除此还含有钙、磷、铁、胡萝卜、维生素C等其它成分

| Abstract: | Xinyang is a mountainous city in the sowth of Henan prorince. There is a wide range of natural resources of wild vegetables there Fiddlehead is one of them wild vegetable. rich in nutrition and unpolluted here won mon more and more popularity in our daily life. The writer of this paper has analysed the nutritional element of Fiddlehead and the result of the study utiliaztion of Fiddlehead. |
