| 摘 要： | 目的]确定片烟在厦门的最佳醇化期和使用期。方法]观察云南和贵州黔南复烤片烟B2F、C3F和X2F在厦门自然醇化过程中香气和口感特性的变化,研究其最佳醇化周期。结果]香气和口感特性均经历了优化—最佳—恶化3个阶段。香气特性在醇化的第8~16个月普遍达到最佳状态,综合状态在第16个月普遍达到最佳。云南下部烟的最佳醇化期为14个月,其余均为16个月;上部烟的最佳使用期均为醇化的第10~22个月,下部烟均为第6~18个月,云南、贵州中部烟分别为第10~22个月和第6~18个月;贵州下部烟的最大醇化期限不宜超过24个月,可能是受样品单一性的影响,其余均不宜超过36个月。最佳醇化期较之前的研究最长可缩短20个月,最佳使用期前移2~16个月。结论]该研究为沿海和南方卷烟厂的生产提供了参考。 |

| Abstract: | Objective]The study aimed to ascertain the optimum alcoholization period and using period of stripes in Xiamen.Method] The change of aroma and taste characteristics of Yunnan and southern Guizhou redried strips B2F,C3F and X2F in the natural alcoholization course in Xiamen was observed,and its optimum alcoholization period was studied.Result] Both aroma and taste characteristics experienced 3 stages of optimizing-optimum-worsening.The aroma characteristics generally reached the optimum state in the 8th～16th month of alcoholization and the comprehensive state generally reached the best in the 16th month of alcoholization.The optimum alcoholization period of lower tobacco was 14 months in Yunnan,and that of the other was all 16 months.The optimum using period of upper tobacco was all in the 10th～22th month of alcoholization,that of lower tobacco was all in the 6th～18th month,and that of middle tobacco in Yunnan and middle Guizhou were in the 10th～22th and 6th～18th month.The maximum alcoholization time of lower tobacco in Guizhou was not suitable to be more than 24 months,resulting in the influence of sample singleness,and that of the other were not suitable to be more than 36 months.The optimum alcoholization period could be shortened for 20 months at most than that in the researches before it,the optimum using period was forward shifted for 2～16 months.Conclusion] The research provided reference for the production of costal and southern cigarette making factories. |
