红檵木花色素苷稳定性及叶片细胞液pH值变化的研究

摘    要:对红檵木花色素苷稳定性及叶片细胞液pH值变化进行的研究结果表明:高温能促使红檵木花色素苷迅速降解,pH值大小不仅影响花色素苷的颜色,而且影响其稳定性;随着pH值的增加,花色素苷降解速度常数增大。同时,随着叶色由红转绿,细胞液的pH值首先逐渐增大,到6月中旬pH值又下降。

Abstract:Anthocyanin was extracted from leaves of _Loropetalum chinense var.rubum_ to study its stability at different temperatures and pH.The results showed that anthocyanin was stable at low temperature and degraded quickly with temperature increase.Anthocyanin color changed in different pH solutions.With the pH increase,from 3.0 to 7.0,anthocyanin became unstable and was lost.It was also observed that pH value increased in cell sap of leaves with the leaf color changes from fresh red to dark-red or green.Shading or spreading water to lower temperature may keep the leaves red in summer.
