黑粒小麦的选育及其抗氧化特性

摘    要:摘要:本文选育的黑粒小麦为黑皮黑胚乳,含有丰富的水溶性黑色素的小麦,国内外对黑色素作了一定的开发研究,但黒粒小麦清除二苯基-2-苦肼基自由基的研究还很少。本研究以普通小麦和抗坏血酸为对照,通过DPPH 法测定黑粒小麦色素粗提物体外抗氧化、清除自由基能力。研究结果表明:黑粒小麦黑色素粗提物具有呈量效关系的抗氧化活性,其清除自由基能力远大于普通小麦,但小于抗坏血酸。普通小麦、黑粒小麦3-2、3-3、3-4、3-11、3-13、3-33、3-36、3-37、3-39、10-38和Vc清除50% DPPH 自由基的有效浓度(EC50)分别为689.05、39.89、71.51、58.57、48.13、33.99、105.27、62.15、30.97、35.15、35.09、0.196 mg/ml,其自由基清除能力AE 分别为0.15×10-2、2.51×10-2、1.4×10-2、1.7×10-2、2.08×10-2、2.94×10-2、0.95×10-2、1.61×10-2、3.23×10-2、2.84×10-2、2.85×10-2、510×10-2。这些为进一步研究、开发和利用黒粒小麦黑色素奠定理论基础。

Abstract:Our Black-grained Wheat contains black endosperm and rich water-soluble pigment, which had been studied both at home and abroad. There was almost no study on free radical scavenging effect of these pigments in Black-grained Wheat by DPPH.' Using Chinese Spring and Vc as the control, We evaluated free radical scavenging and anti-aging effect of pigment crude extract in black-grained wheat by DPPH. The results showed that pigment in Black-grained Wheat had close-dependent effect on free radical scavenging. The ability of free radical scavenging and anti-aging of the pigment crude extracted from Black-grained Wheat was greater than those of Chinese Spring, but lower than those of Vc. ECs0 (50% the initial DPPH concentration) of Chinese Spring, Black-grained Wheat 3-2, 3-3, 3-4, 3-11, 3-13, 3-33, 3-36, 3-37, 3-39, 10-38 and Vc was 689.05, 39.89, 71.51, 58.57, 48.13, 33.99, 105.27, 62.15, 30.97, 35.15, 35.09, 0.196 mg/mL DPPH respectively, and the antiradical efficiency (AE) was 0.15×10-2、2.51×10-2、1.4×10-2、1.7×10-2、2.08×10-2、2.94×10-2、0.95×10-2、1.61×10-2、3.23×10-2、2.84×10-2、2.85×10-2、510×10-2. All of this lay a foundation for further study, exploit and utilize pigment in Black-grained Wheat.
