| 摘 要： | 沧源高峰黄牛是产于云南省临沧市沧源佤族自治县的特有黄牛物种,采用高峰黄牛肉制作的牛干巴在营养价值、风味口感、卫生品质等方面有独特的开发前景.本文论述了沧源高峰黄牛牛干巴产业在各方面的开发价值,以及相关研究的现状,并从营养和健康相结合的角度对沧源高峰黄牛牛干巴产业的利用前景进行了探讨.
