大白菜不同品种硝酸盐含量累积因素的探讨

摘    要:对黑龙江省12个主栽大白菜品种及内、外叶的硝酸盐、亚硝酸盐含量进行了分析。结果 表明,各品种内叶中硝酸盐、亚硝酸盐含量较低,品质好,可溶性固形物含量高,结球紧实的矮 桩白菜硝酸盐、亚硝酸盐含量低。这时因为品质好的新生叶含水量低,且含有较多的全磷、全钾, 加之硝酸还原酶活性强,因此加速了碳水化合物、蛋白质和磷脂,特别是维生素的合成过程,加 速了硝酸盐的还原转化,积累较少。

Abstract:Analysis chinese cabbage of twelve leading varieties and their nitrate and nitrite content of internal and external leaf in HeiLongJiang Province. The results indicated that there is few content in nitrate and nitrite. But there is many content in soluble solid, So quality is good in internal leaf to every chinese cabbage. Because the water content of internal leaf is low and the content of total-P and total - K is high moreover the nitrate reductase activity is strong Accelerate the synthetic process of carbohydrate, protein, phosphatide, especially vitamin. Accelerate the reducing conversion of nitrate. There is few nitrate accumulate.
