蓝莓果中花青素的提取

摘    要:以蓝莓果为原料,研究其花青素合适的提取工艺条件。确定了最佳提取条件为pH3.0,浸提温度40℃,浸提时间2h,浸提乙醇体积分数70%,提取次数2次,料液比1:5,在此条件下提取率为4.49mg/g。
