摘    要:采用顶空固相微萃取—气质联用法分析了由乌牛早、鸠坑、福云6号3个茶树品种鲜叶制成绿茶的香气成分,分别鉴定出43、51、42种香气成分.结果表明,3个茶样的香气成分主要以醇类化合物为主,其次为萜烯类和烷烃类化合物,而醛类、酮类和酯类化合物总量较低,未检测到酸类化合物.乌牛早的醇类化合物(57.6%)显著高于鸠坑(35.2...

Abstract:The aroma components in three cultivars of green tea,Wuniuzao,Jiukeng and Fuyun 6,were analyzed using headspace solid-phase micro-extraction-gas chromatography-mass spectrometry method(HS-SPME-GC-MS).We detected 43 kinds of aromatic substances in Wuniuzao,51 kinds in Jiukeng and 42 kinds in Fuyun 6.The results showed that main compounds in cultivars were alcohols,Wuniuzao had the highest content(57.6%) followed by Jiukeng(35.2%),while Fuyun 6 had the lowest content(22.5%),in which Wuniuzao had the highest linalool(38.94%).The contents of alkenes in Wuniuzao,Jiukeng and Fuyun 6 were 10.2%,20.0% and 23.3%;and for alkanes,10.1%,23.3% and 7.5% respectively.These 3 cultivars had low concentrations of aldehydes,ketones and esters;acids were not found in these samples.The major aromatic components in Wuniuzao were 1-octanol,linalool and its oxides,geraniol and α-farnesene.The major aromatic components in Jiukeng were linalool and its oxides,farnesol,dodecane,cyclocitral and 2,4-dimethyl-cyclohexanol,while Fuyun 6 had more 1-octanol,linalool and its oxides,nonanal,nerolidol and 3,4-epoxy-3-ethyl-2-butanone.
