| 摘 要： | 对甘啤3号大麦麦芽根干品中营养成分进行了分析测定,结果表明:麦芽根中蛋白质含量为30.18%,脂肪1.57%,粗纤维11.84%;矿质元素中K、Ca、Fe、Zn、Mg含量较高,分别为1 813、240、38.3、8.9、720 mg/100g;氨基酸总含量为8.69%,其中人体必需的8种氨基酸占氨基酸总量的3.29%,亮氨酸、苯丙氨酸含量相对较高;维生素B含量也相对较高.

| Abstract: | Nutrition components in dried malt root of barley(cv.Ganpi No.3) were analyzed by the methods of the Chinese National Standard.The results showed that the content of protein,fat and fiber was 30.18 %,1.57 % and 11.84 %.The roots had richer of K,Ca,Fe,Zn,Mg,and were 1 813.0,240.0,38.3,8.9 and 720.0 mg/100 g,respectively.The total amino acid was 8.69 %,eight kinds essential amino acid made up of 3.29 % of total amino acids,and Leu and Phe showed higher.The roots also riched in VB. |
