温度和臭氧处理对储藏大米脂肪酸值影响的回归方程研究

摘    要:通过模拟储藏,探讨了温度和臭氧处理对储藏大米脂肪酸值的影响。结果表明:经过臭氧处理后的大米脂肪酸值增加了21%,说明臭氧处理对大米脂肪酸值有一定影响。臭氧处理与未经臭氧处理的大米在储藏过程中的脂肪酸值变化趋势相似,在储藏初期60d内,随着储藏时间的延长而逐渐增加,且温度越高,增幅越明显,60d后,均有不同程度的下降,但臭氧处理大米的脂肪酸值略高于同温度、同时期未经臭氧处理大米的脂肪酸值。方差分析表明储藏温度和时间都是储藏大米脂肪酸值变化的极显著影响因素,拟合结果表明大米脂肪酸值与温度、时间呈极显著的二元线性关系。

Abstract:The effects of temperature and ozonization on the fatty acid value of stored rice were discussed by simulated storage. Results: The ozonization on the fatty acid value of rice had certain influence because the fatty acid value of rice increased twenty--one percent after the ozonization. The variation trend of the fatty acid value of rice proceed by the ozone was similar with that without the ozone processing. The fatty acid value of stored rice increased gradually, the higher the temperature was, the more obviously increased with the extension of storage time, in the early 60 days, and declined to different degrees 60 days later. But the fatty acid value of the test rice was a little more than that of the control group at the same temperature and time. The Storage temperature and time had very significantly effect on the change of the fatty acid value of stored rice by analysis of ANOVA. The fatty acid value of stored rice had very significantly binary linear relationship with storage temperature and time by SPSS analysis software.
