摘    要:为油梨品种选育及种子中化学成分在食品、医药等行业的应用提供参考,采用直接灰化法、蒽酮法和指示剂滴定法等方法检测海南(儋州、白沙)、云南(瑞丽)和广西(南宁)16份油梨种子资源的含水量、灰分、可溶性糖、可滴定酸、可溶性蛋白质、总酚和总黄酮7种化学成分,并对国内油梨资源与国外油梨品种Hass进行比对。结果表明:7种化学成分含量在大部分油梨资源间呈显著性差异(P0.05)。含水量、灰分和总酚含量在16份油梨资源间差异较小,而可溶性糖、可滴定酸、可溶性蛋白质和总黄酮含量在16份油梨资源间差异较大。与其他15份国内油梨资源比较,Hass种子含水量(55.76±0.15)g/100g FW]和可溶性糖含量(0.69±0.03)g/100g FW]最低,灰分含量(0.99±0.02)g/100g FW]最高,可滴定酸含量(1.80±0.00)g/100g FW]较低,其他成分处于中间水平。

Abstract:The components of moisture,ash,soluble sugar,titratable acid,soluble protein,total phenols and total flavonoids in seeds of 16 P.americana from Hainan,Yunnan and Guangxi were determined by direct ashing,anthrone and indicator titration methods and then 7 chemical components were compared between 15 domestic P.americana varieties and Hass (foreign P.americana variety) to provide a reference for breeding of P.americana varieties and application of P.americana seeds in food and pharmaceuticals industries.Results:There are significant differences in seven components among most P.americana varieties.There is a little difference in moisture,ash and total phenols content but a greater difference in soluble sugar,titratable acid,soluble protein and total flavonoids content among 16 P.americana varieties.The moisture,soluble sugar,ash and titratable acid content in seeds of Hass is (55.76±0.15)g/100g FW] (the lowest),(0.69±0.03)g/100g FW](the lowest),(0.99±0.02)g/100g FW](the highest) and(1.80±0.00)g/100g FW] (the lower)respectively but the soluble protein,total phenols and total flavonoids content in seeds of Hass is at the median level among 16 P.americana varieties.
