莱芜猪及其杂交猪肌肉理化性状与肉品品质关系的研究

摘    要:本试验对72头莱芜猪及其杂交猪的不同解剖部位肌肉的破碎指数、传导值等理化指标进行了测定和分析。试验结果表明,各肉质指标间存在着一定的相关,破碎指数与肌浆钙离子浓度间以及传导值与宰与1h肌肉PH间存在着极显著的正相关。

Abstract:The Chemical and physical traits suchas fragmentation index,transmission value and concentration of sarcoplamatic ca 2+ etc. at different anatomical locations were measured and analysed in this experiment with seventy -two laiwu swine and its crossing swines .The results indicate that,there are relations among traitc of meat quality in some extent. Fragmentation index is related to concentration of sarcoplamatic ca 2+ ,transmission value to muscle pH at one hour postmortum significantly. The difference between anatomical locations and cross combinations results in the different traits of meat quality are different, for example, fragmentation index of PM is the smallest,the following is LD and SM.The results also indicate that Duroc- landrace-laiwu is the best cross combination in three-way cross of laiwu swine.
