葡萄花色苷的研究进展及应用前景

摘    要:葡萄中含有大量生理活性物质,其主要为花色苷和原花色素等多酚类化合物,两者含量约为多酚类化合物的95%。该文就葡萄中的多酚类化合物中花色苷的种类、化学结构、性质、含量、提取方法以及发展前景作以论述,对葡萄功能性食品的开发和综合利用具有一定的参考价值。

Abstract:There are many kinds of physiological active hydroxybenzene in grape fruits.The main ingredients are anthocyanin and anthocyanidin, the total content is about 95%.It is discussed for the kinds, chemical structures, properties, the contents, extract methods and application prospect of the anthocyanin in the paper.This has definite reference value to the development and integrates utilization of function grape food.
