摘    要:用分光光度计测定猪肉提取液中的肌苷酸光密度,求得每克鲜肉中肌苷酸含量,发现品种间差异显著,宰后3.5小时肌苷酸含量与肉质有一定关系。PSE肉发生率高的猪种,宰后3.5小时眼肌肌苷酸含量也高,而pH值较低。


PHOTOMETRIC DETERMINATION OF INOSINIC ACID IN THE MUSCLE OF DIFFERENT STRAINS OF PIGS
Abstract:Significant differences were found in the inosinic acid contents of muscle in different strains of pigs. In the strains of pigs which were liable to produce PSE meat, the inosinic acid contents of the eye muscle 3。5 hours after sla-ughter were higher, and the pH values were lower.
