丝素蛋白溶液乳化性质的研究

摘    要:探讨了丝素蛋白质在生物材料领域内作为微胶囊壁材应具有的相关理化性质。经钙盐解的丝素蛋白质溶液具有良好的乳化特性和稳定性,在pH 3~10范围内其乳化特性和稳定性变化不是很明显。随着丝素浓度的增加,丝素蛋白的乳化特性、起泡性及其稳定性增强,溶液呈乳白色均匀体系。丝素蛋白的这些良好性质为制备丝素蛋白微胶囊奠定了物质基础。

Abstract:The degummed silk fibroins were dissolved in the calcium chloride reagent solution. After the process of the dialysis and freeze-drying, the properties of silk fibroin solution with certain concentration were investigated in this paper. The results showed that the fibroin solution has excellent emulsification and stability within pH 3 -10. The emulsification, frothability and its stability increased along with the increasing concentra- tion. The color of the solution is ivory-white systems. This study evaluated the application of the silk fibroin protein in the biomaterial fields.
