摘    要: 研究了氮钾配施对小麦济南17高分子量谷蛋白亚基(HMW-GS)含量和面粉品质的影响。结果表明,氮肥对亚基7+8含量影响最大,其次是亚基1,对亚基4+12影响最小,氮钾互作仅对Glu-D1位点亚基含量有显著作用,钾肥对各个位点亚基含量的影响均不显著。氮肥对面粉蛋白质含量、湿面筋、沉降值和面粉谷蛋白大聚体(GMP)含量均影响显著。氮钾互作对沉降值和GMP含量的影响也达到显著水平。除沉降值外,钾单独作用对其它品质参数的影响均不显著。3个位点HMW-GS含量与面粉品质密切相关,GMP含量与HMW-GS含量和其它品质

Abstract:Effects of N and K fertilizers on contents of high molecular weight glutenin subunits (HMW-GS) and flourquality of wheat cultivar Jinan17 were investigated. N nutrition affected greatly on contents of subunits 7 8, then subunit1, and lest on subunits 4 12. The subunits at Glu-D1 allele were influenced significantly by the interaction of N and Kfertilizer. K nutrition affected on all subunits insignificantly. Flour protein content, wet gluten content, sedimentation valueand flour glutenin macropolymer (GMP) content were affected obviously by N application. In addition, sedimentation valueand flour GMP content were also influenced significantly by the interaction of N and K fertilizer. All quality parameters werenot influenced by single K nutrition except for sedimentation value. Relationship between contents of HMW-GS and flourquality was also discussed, contents of HMW-GS at three Glu-1 alleles related closely to all quality parameters. Flour GMPcontent correlated more significantly to contents of HMW-GS and other quality parameters. In order to analyse thecontribution of different HMW-GS on Jinan 17 flour quality, multiple regression to flour properties of HMW-GS contentswere made. Jinan17 is prominent in flour quality probably due to subunits 4 12 for its great amount and the close relationshipwith flour qualities.
