玉米蛋白水解物螯合锌的工艺研究

摘    要:目的]优化玉米蛋白水解物与锌的螯合工艺。方法]以玉米蛋白粉为材料,氯化锌作为锌源,通过单因素试验研究玉米蛋白水解物的制备方法、玉米蛋白水解物与锌质量比、pH值对螯合反应的影响,并采用正交试验对螯合工艺进行优化,化学方法对螯合物进行初步鉴定。结果]最佳的螯合工艺条件为:玉米蛋白水解物的制备方法为木瓜蛋白酶结合中性蛋白酶法,pH值8.0,玉米蛋白水解物与锌质量比3∶1;该条件下螯合物得率和螯合率分别为77.8%和97.7%;该试验制备的螯合物是一种不同于玉米蛋白水解物和锌的新物质。结论]为玉米蛋白水解物与锌的螯合物的生产提供技术支持。
