高新技术在大豆精深加工中的应用

摘    要:大豆是优良的植物蛋白质食品,既含有丰富的植物蛋白和植物脂肪,又富含其他产品无法比拟的、对人体有益的生理活性物质,如大豆低聚糖、大豆异黄酮、大豆磷脂、大豆多肽、大豆皂苷、大豆膳食纤维和天然维生素E等,对人们的强身健体起到了十分重要的作用。该文介绍了高新技术在豆乳杀菌工艺、大豆食品安全检测和大豆精深加工中的应用。

Abstract:Soybean is an excellent plant protein food.It contains rich vegetable protein and vegetable fats.It is rich in physiological active substances,such as soybean oligosaccharides,soybean isoflavones,soybean lecithin,soybean peptide,soybean saponin,soybean dietary fiber,and vitamin E.These substances can not be compared by other products,are beneficial to human body,and play a very important role for people physical fitness.Applications of high and new technology in soymilk sterilization process,soybean food safety testing and deep processing of soybean were introduced.
