蓝莓叶水提物的体外抗氧化活性

摘    要:通过对蓝莓叶水提物的还原力、DPPH.自由基的清除率及总抗氧化能力的测定,检测蓝莓叶水提物的体外抗氧化活性。同时以Vc和BHA为对照,并与等质量Vc,BHA混合,考察Vc和BHA对蓝莓叶水提物体外抗氧化效果的影响。结果表明,蓝莓叶水提物对DPPH.自由基的清除能力及还原力均弱于Vc和BHA,且差异达极显著水平。但在一定浓度范围内,蓝莓叶水提物的总抗氧化能力与BHA相近。在还原力上,Vc与蓝莓叶水提物之间存在协同作用。蓝莓叶水提物体外抗氧化活性虽弱于Vc和BHA,但将一定量的提取物混于BHA中可产生相近的抗氧化效果。因此,蓝莓叶水提物可减少化学合成抗氧化剂在食品中的添加。

Abstract:The in vitro antioxidation activities of blueberry leaf water extracts were studied by detecting the reduction force,scavenging effects on DPPH·radical and total antioxidant capacity.Taking combination of vitamin C and BHA as control group,with the same weight vitamin C and BHA mixture,the effects of Vc and BHA on in vitro antioxidation blueberry leaf water extracts were studied.The results showed that: scavenging capacity and reducing power of DPPH·radical on water extracts of blueberry leaf were lower than vitamin C and BHA.But in a certain concentration range,total antioxidant capacity of water extracts of blueberry leaf was similar with BHA.In reduction of force,Vc and water extracts had cooperative effect.The antioxidant activity of water extracts of blueberry leaf was weak in Vc and BHA,but a certain amount extracts mixing in BHA could have the similar antioxidant effect.Therefore,blueberry leafwater extracts could reduce chemical synthetic antioxidants additive in food.
