| 摘 要： | 牛蒡，菊科二年生草本植物，含有的膳食纤维是根菜类植物中含量最多的一种。具有很高的营养及药用功能。本文从牛蒡子的资源分布、营养价值与药用价值、在食品工业中的应用现状和对策进行了综述。还从国际和国内市场分析了牛蒡子的开发前景。

| Abstract: | Burdock,compositae biennial herbs,containing the most of dietary fiber,is considered of high nutritional and medicinal value.This article not only discusses the food industry and the application of measures via the burdock distribution of resources,nutritional value and medicinal value,but also the development of burdock markets from a view of international and domestic market analysis. |
