水晶牦牛肚加工工艺的研究

摘    要:探讨了水晶牦牛肚的加工工艺。通过正交试验筛选出了水晶胶冻的最佳原料配方。对产品采用真空软包装,生产出了风味独特、食用和携带均很方便的软包装食品。

Abstract:The processing technology of crystallized yak paunch was studied. Orthogonal experiment was used to select the best material formulation of crystal colloided liquid. Productions were packaged with vacuum soft packing, It was produced a kind of food with special flavor, eating and taking conveniently.
