| Abstract: | The paper introduced the nutritional value and utilization of banana and its by-products, summarized the research status of processing and utilization of banana fruit and its by-products (stem, leaf and peel), and analyzed the existing problems in the development of banana industry and development prospect in the future, in order to provide the theoretical basis on full development and utilization of banana resources in China and improving the added value of the products. |
