香蕉及其副产物的加工利用研究进展

摘    要:介绍香蕉及其副产物的营养与利用价值,综述香蕉果实及其副产物(茎叶、果皮)的加工利用研究现状,并分析香蕉产业发展中存在的问题以及今后的发展前景,旨在为充分开发利用我国香蕉资源、提高产品附加值提供理论依据。

Abstract:The paper introduced the nutritional value and utilization of banana and its by-products, summarized the research status of processing and utilization of banana fruit and its by-products (stem, leaf and peel), and analyzed the existing problems in the development of banana industry and development prospect in the future, in order to provide the theoretical basis on full development and utilization of banana resources in China and improving the added value of the products.
