摘    要:对生菜、油菜、苦苣、多味奇菜的硝酸盐含量、维生素C、可溶性蛋白质、可溶性糖、硝酸还原酶活性和产量进行测定,研究相同施肥处理下土壤栽培的4种叶菜类蔬菜硝酸盐积累的差异以及其营养品质和产量的情况.在4种供试叶菜类蔬菜中,苦苣硝酸盐含量最低,产量最高、维生素C含量等各方面综合品质高于其它供试叶菜类蔬菜.研究结果对选择蔬菜中的低硝酸盐积累品种提供了依据,大大改善了蔬菜食用价值.

Abstract:Nitrate,vitamin C,soluble protein,soluble sugar,nitrate reductase activity and output in lettuce,rape,bitter lettuce were measured with same soil fertilization treatment.The results showed that in four kinds of leafy vegetables,bitter lettuce nitrate content minimum,the highest yield,vitamin C content in areas such as integrated test for quality higher than that of other leafy vegetables,It provide a basis for choicing low nitrate accumulation vegetable varieties,which has greatly improved vegetable consumption value.
