摘    要:分别采用PDMS、CAR/PDMS和DVB/CAR/PDMS萃取头的固相微萃取(SPME)提取小米粥中挥发性成分,经气相色谱-质谱联用(GC-MS)对挥发性成分进行鉴定,分析比较3种萃取头提取小米粥中挥发性成分差别,确定适宜的萃取头。3种萃取头的SPME共检测出挥发性成分38种,其中PDMS检出15种、CAR/PDMS检出25种、DVB/CAR/PDMS检出37种。DVB/CAR/PDMS最适合提取小米粥中挥发性成分。

Abstract:The volatile compounds in millet congee were extracted by solid phase micro-extraction(SPME) with PDMS,CAR/PDMS and DVB/CAR/PDMS fibers,which were identified by GC-MS,and the appropriate one was selected.The results indicated that total 38 kinds of volatile flavor compounds were identified,in which 15 by PA fiber,25 by CAR/PDMS fiber and 37 by DVB/CAR/PDMS fiber.DVB/CAR/PDMS fiber was the most appropriate one.
