摘    要:利用奶公犊生产犊牛肉已成为国内外肉牛业发展的一大热点,本文综述了国内外奶公犊的资源利用情况,犊牛肉的分类及肉品质评价指标,以期为我国奶业犊资源的利用提供参考。

Abstract:Using dairy bull calf to produce veal has become a hot spot of beef cattle industry development at home and abroad. This paper reviewed the utilization situation of dairy bull calf resource, classification of veal and the researchprogress of quality in the domestic and foreign.
