摘    要:介绍了辐照技术在果蔬保鲜中的应用现状,阐述了辐照保鲜的机理及优点,论述了剂量、贮藏温度和产品种类等不同因素对辐照保鲜效果的影响,确定了果蔬辐照保鲜的条件。
