不同大豆品种豆腐产量的研究

摘    要:选用23个辽宁、吉林和山东的春大豆和夏大豆栽培品种为试材。调查百粒重和单株粒重,测定豆腐加工特性、籽粒蛋白质含量和籽粒蛋白质各组分含量。研究表明:筛选到豆腐产量高的品种可能性很大。可把籽粒吸水重和籽粒膨胀体积作为品种豆腐产量的间接选择性状。筛选到豆腐产量与单株粒重均高的品种难度很大,筛选到豆腐产量和籽粒蛋白质含量均高,豆腐产量和籽粒蛋白质质量均高的品种存在着一定难度。不同品种籽粒蛋白质各组分含量差

Abstract:spring and summer soybean cultivars from Laioning,Jilin and Shandong Provinceswere chosen. Their weight per 100 seeds, seed weight per paint,characteristics in tofu processing, protein content and protein component content in seeds were investigated. Thestudies showed that:It is entirely possible to select the varieties of high tofu yield. Waterweight soaked by seeds and expansive volume of seeds Can be used for indirect variety selection of tofu yield. It is very difficult to select the varieties of high tofu yield and high seedweight per plant. It is probably difficult to select the varieties of high tofu yield and high protein content in seeds or the varieties of high tofu yield and high protein quality in seeds. Thedifferences of protein component contents in seeds among varieties are very significant. Thevarieties with low glutelin content in seeds have high tofu yield. The varieties with high prolamine content in seeds have high tufu yield. The tofu yield of varieties is not affected by 11Sglobulin, 7S globulin, 2S globulin and albumin contents in seeds. The utilization ratio of 11Sglobulin, 7S globulin and albumin in seeds is high in tofu processing. The utilization ratio of2S globulin in seeds is low in totu processing.
