摘    要:目的]为人工养殖中华鲟的产业化开发及加工利用提供理论依据。方法]以1龄人工养殖中华鲟为试验样本,分别测定其含肉率和肌肉的生化成分,并对其营养价值进行评价。结果]1龄人工养殖中华鲟的含肉率为68.43%,其肌肉的生化成分为:水分79.85%,蛋白质16.97%,脂肪0.99%,灰分1.49%,无氮浸出物0.70%;鱼肉中富含18种氨基酸,其中谷氨酸(Glu)含量最高,其次为赖氨酸(Lys)、天冬氨酸(Asp)和亮氨酸(Leu),胱氨酸(Cys)含量最低;鱼肉必需氨基酸占总氨基酸的比值(Weaa/Wtaa)为42.79%,必需氨基酸与非必需氨基酸的比值(Weaa/Wneaa)为74.81%;必需氨基酸指数(EAAI)为69.76。结论]1龄人工养殖中华鲟具有较高的营养价值。
