| 摘 要： | 目的]研究杨梅品种对喷雾干燥杨梅粉品质的影响。方法]将东魁杨梅、黑炭梅、临海早大梅喷雾干燥成杨梅粉,通过测定杨梅粉的水分含量、色泽、表观密度、湿润性和休止角研究3种杨梅粉的品质。结果]东魁杨梅、黑炭梅和临海早大梅对杨梅粉水分含量、色泽、表观密度以及休止角有显著影响;而这3种杨梅品种对杨梅粉湿润性的影响不明显。结论]不同杨梅品种显著地影响喷雾干燥杨梅粉的产品品质。

| Abstract: | Objective] Effects of the varieties of bayberry on the properties of spray-dried bayberry powder were studied.Method] The production of bayberry powder from three different varieties of bayberry （DK,HTM and ZDM） using the spray drying technique has been selected.The properties of spray-dried bayberry powder was investigated by determining moisture content,color,apparent density,wettability and angle of repose of bayberry powder.Result] The results showed that the varieties of bayberry have a significant effect on moisture content,color,apparent density and angle of repose of the spray-dried bayberry powder.The effect of the varieties of bayberry on wetting of the spray-dried bayberry powder is not obvious.Conclusion]The results confirmed that the varieties of bayberry have significantly effect on the properties of spray-dried bayberry powder. |
