| 摘 要： | 目的]分析紫苏叶的营养成分。方法]采用凯氏定氮法、索氏抽提法等方法,测定紫苏叶的营养成分。结果]紫苏叶常量营养成分含量较高,其蛋白含量高达24.89%;紫苏叶含多种人体所需微量元素及16种人体所需氨基酸(其中7种人体必须氨基酸),微量元素中钙和磷含量较高,紫苏叶钙含量为2 354 mg/kg,磷含量为1 341 mg/kg;紫苏叶氨基酸总量和必须氨基酸总量为25.14%和11.09%。结论]紫苏叶含有丰富营养成分,该研究为合理开发利用紫苏叶提供重要依据。

| Abstract: | Objective] The research aimed to analysis the nutritional components of perilla leaf. Method] Using the Kjeldahl method, Soxhlet extraction method and other methods, the nutritional components of perilla leaf were determined. Result ] The constant nutrient content of perilla leaf were higher, its protein content as high as 24.89%. Perilla leaf contains various trace elements needed by the body and 16 kinds of amino acids needed by the body （7 kinds of which the human body essential amino acids）, trace elements calcium and phosphorus content in higher, calcium content of perilla leaf Was 2 354 mg/kg, phosphorus content was 1341 mg/kg. The total amino acids and essential amino acids of perilla leaf amounted to 25.14% and 11.09%. Conclusion] Perilla leaves were rich in nutrients, this study provides the important basis for the rational development and utilization of perilla leaf. |
