出口水产品中微生物污染调查分析及限量探讨

摘    要:为了解出口水产品中微生物污染状况,并为制定微生物限量标准提供依据。采用GB/T 4789—2010的微生物检测方法,检测待出口水产品中菌落总数、大肠菌群、大肠杆菌、沙门氏菌及金黄色葡萄球菌,并与国内外微生物限量标准进行比较。结果显示,374份检测样品中均未检出大肠杆菌及沙门氏菌;金黄色葡萄球菌的总检出率为1.87%;菌落总数基本符合标准,达标比例分别为:鱼制品93.3%,冷冻鱼类96.36%,虾类100%,软体动物85%,饭食类88.89%;大肠菌群为主要污染菌,上述种类符合标准的比例分别为:58.53%,77.38%,72.73%,45%,100%。

Abstract:In order to understand the status of microbial contamination in aquatic products for export,and provide the basis for microbial limits standard,the microbial detection methods in national food safety standard of GB/T 4789—2010 are used,to detect the total number of bacteria,coliforms,Escherichia coli,Salmonella and Staphylococcus aureus,and to compare with the international microbial limit standard.The results show,Escherichia coli and Salmonella are not detected in 374 samples, Staphylococcus aureus detection rate is 1.87%,the total number of colonies is basically consistent with the standard,and the proportion of qualified product are 93.3%,96.36%,100%,85%,88.89% in fish products,frozen fish,shrimp,mollusks and meals respectively,coliform group is the main contaminated bacteria,the proportion of qualified product in above species are 58.53%,77.38%,72.73%,45% and 100%,respectively.
