| 摘 要： | 以波尔山羊与关中奶山羊级进杂交后代及关中奶山羊为原料,测定不同月龄样品肌肉中羟脯氨酸含量,分析比较羟脯氨酸含量与肌肉剪切力数据的相关性。结果表明,相同月龄不同品种羊肉中羟脯氨酸的含量存在显著差异(p<0.05),F2代最低,对照组关中奶山羊最高;相同代数不同月龄肌肉中羟脯氨酸的含量6月龄与8月龄之间无显著差异(p>0.05),但6月龄、8月龄与10月龄之间存在极显著差异(p<0.01);不同品种及月龄山羊肌肉中羟脯氨酸含量与剪切力程显著负相关(R=0.647 70>0.576=R0.05(10))。

| Abstract: | Hybrid offspring of Boer goat test Guanzhong milk goats and muscle content of hydroxyproline is determined by analysis and comparison of different hybrid generation of Boer goats,different age of hydroxyproline content in muscle,and muscle hydroxyproline acid content and the Texture Analyzer(VBF) to detect the shear force data correlation analysis.The results show that the content of hydroxyproline in same age and different variety of goat show the significant differences(p< 0.05),F2 is the lowest,and Guanzhong goat is the highest.The content of hydroxyproline in same variety and different age of goat is no differences(p>0.05) between age 6 and age 8.But there are significant differences(p<0.01) between age 6,8 and age 10.Compare with tenderness data,there are significant relationship between tenderness and the content of hydroxyproline(R=0.647 70> 0.576=R 0.05(10)). |
