摘    要:目的]探索超声提取桂西生姜色素的最佳工艺及稳定性。方法]以生姜为原料,采用单因素试验,研究不同料液比、提取温度、超声功率和提取时间对生姜色素提取效果的影响,再采用正交试验确定超声提取生姜色素的最佳工艺条件;通过稳定性试验,研究pH、温度、金属离子、常见食品添加剂、氧化剂和还原剂以及太阳光照对生姜色素稳定性的影响。结果]生姜色素的最佳提取工艺条件为料液比1∶30,提取温度65℃,超声功率140 W,提取时间40 min。生姜色素在酸性条件下较稳定,耐热性较好,耐光性较差,耐氧化还原性较强;苯甲酸钠和柠檬酸对生姜色素稳定性的影响较大;金属离子中,Ni2+、Fe3+、Cu2+对色素稳定性有一定影响,以Fe3+影响最大。结论]该研究为生姜色素的开发和利用奠定了理论基础。

Study on Optimum Extraction Technology and Stability of Pigment from Ginger in West Guangxi by Ultrasonic Method

Abstract:Objective] The study aimed to explore the optimum technology and stability of pigment from the ginger in west Guangxi by the ultrasonic method.Method] With the ginger as the material,the effects of different solid-liquid ratio,extraction temperature,ultrasonic power and extraction time on the extraction effect of pigment from the ginger were studied by the single factor test,the optimum technology conditions for extracting the pigment from the ginger were confirmed and the influences of pH value,temperature,metal ions,common food additives,antioxidants and reducing agent and the sun light on the pigment from the ginger were investigated through the stability experiment.Result] The optimum technology conditions for extracting the pigment from the ginger were as follows: the solid-liquid ratio of 1∶ 30,extraction temperature of 65 ℃,ultrasonic power of 140 W and extraction time of 40 min.The pigment from the ginger was stable in acidic condition and had the good heat resistance,more poor resistance to the light and more strong resistance to the oxidation reducing.Sodium benzoate and citric acid had a greater influence on the pigment from gender.Among the metal ions,Ni2+,Fe3+ and Cu2+ had a certain influence on the stability of pigment,with influence of Fe3+ being most.Conclusion] The study laid the theoretical basis for the development and utilization of the pigment from gender.
