保健型魔芋珍珠奶茶的研制

摘    要:目的]研究制作魔芋珍珠奶茶的最佳配方。方法]采用单因素试验和正交试验,考察淀粉用量、魔芋粉用量、海藻酸钠浓度、乳酸钙用量对魔芋珍珠品质的影响;采用正交试验考察奶液、茶汁、魔芋粉和白砂糖添加量对魔芋珍珠奶茶品质的影响。结果]魔芋珍珠的最佳配方为淀粉用量10 g,魔芋粉用量4%,海藻酸钠浓度0.4%,乳酸钙用量0.10%;魔芋珍珠奶茶的最佳配方为奶液用量50%、茶汁用量20%、白砂糖用量5%、魔芋粉用量为0.20%。结论]该研究可为魔芋珍珠奶茶的生产和加工提供理论依据。

Research and Production of Health Konjac Pearl Milk Tea

Abstract:Objective] The aim was to study the optimum production formula of konjac pearl milk tea.Method] Effects of starch dosage,konjak powder dosage,sodium alginate concentration,calcium lactate dosage on the quality of konjac pearls were studied by single factor experiment and orthogonal experiment.Effects of milk,tea juice,konjak powder and sugar addition quantity on the quality of konjac pearl milk tea were studied by orthogonal experiment.Result] The optimum production formula of konjac pearls was as follows: starch dosage 10 g,konjak powder amount 4 g,sodium alginate concentration 0.4%,calcium lactate dosage 0.10%.The optimum production formula of konjac pearl milk tea was as follows: milk 50%,tea juice 20%,sugar 5%,konjak powder 0.20%.Conclusion] The paper provides a theoretical basis for production and processing of konjac pearl milk tea.
