| 摘 要： | 葡萄是一种营养价值极高的水果,其果实和种子中富含糖、酸、维生素、矿质元素、多酚类物质、膳食纤维等多种营养功能成分,这些营养成分在葡萄鲜果及葡萄制品中的分布、含量、种类均不同。本文论述了葡萄果实及种子中的主要营养成分与功能,简要介绍了葡萄干、葡萄汁、葡萄酒中的各营养成分情况,旨在为消费者和生产者提供参考和依据。

Research Progress of Nutrition and Its Function of Grape and Derived Products |

| Abstract: | Grape is a fruit of very high nutritional value, the pulp and seed are rich in sugar, acid, vitamin, mineral elements, polyphenols, dietary fiber and other nutritional ingredients. The distribution, content and type of the nutrients in fresh grapes and grape products are different. The main nutritients and functions of the grapes and grape seed are discussed in this paper. And the various nutrients in raisins, grape juice, wine are introduced briefly. It aims to provide reference and basis for consumers and producers. |
