壳聚糖涂膜保鲜木瓜研究

摘    要:目的]研究壳聚糖对木瓜的保鲜作用。方法]在常温条件下,采用不同浓度的壳聚糖溶液对木瓜进行涂膜并用薄膜密封处理,测定其失重率、pH值、Vc含量和总糖含量变化。结果]结果表明。用1.0%的壳聚糖水溶液浸泡且密封的木瓜各营养成分变化缓慢,保鲜效果最佳,比正常存放的木瓜延长了10 d。结论]壳聚糖是高效、无毒、无味和低成本的天然保鲜剂。
