摘    要:研究不同干燥方式对橄榄多酚抗氧化活性的影响。采用乙醇浸提法来提取橄榄多酚,AB-8 大孔树脂纯化后干燥,考察热风干燥温度、真空冷冻干燥及远红外干燥方式对橄榄多酚清除 1,1-二苯基-2-三硝基苯肼自由基(DPPH?)、羟自由基(?OH)和 2,2′-二氮-双铵盐自由基(ABTS+?)能力的影响。结果表明:热风干燥处理对橄榄多酚清除 3 种自由基的能力差异显著,以 80 ℃干燥效果最好;3 种处理方式对橄榄多酚清除 DPPH?的影响无显著差异,对?OH 和 ABTS+?清除能力影响差异显著。因此,在选择干燥方式时需要考虑橄榄多酚的用途。

Abstract:The effect of different drying methods on the antioxidant activity of olive polyphenols was investigated.  Olive polyphenols were extracted by ethanol extraction, and the product was purified using AB-8 macroporous resin and then dried. The effects of hot air drying temperature, vacuum freeze drying and far infrared drying on the removal of 1,1-two phenyl-2-three nitrophenyl hydrazine free radical (DPPH?), hydroxyl free radical (?OH) and 2,2′-two nitrogendiammonium salt free radical (ABTS+?) were investigated. The results showed that the ability to scavenging the three free radicals by olive fruit polyphenols was significantly different after hot air drying, and 80 ℃ was the best. There was no significant difference in the effect of the three treatments on DPPH, but there were significant differences in the impact of ?OH and ABTS+? Therefore, the use of olive polyphenols should be taken into consideration when choosing a drying method.
